Menudo, the BEST soup!

Menudo is my all time favorite soup for breakfast on weekend morning or during the holidays at 3 am or 10 am after a long night!

Menudo is a very polarizing recipe. You either love it or you hate it, there is no in between. It’s one of the main reasons why I didn’t include it in my cookbook, I was already limited on the amount of recipes I could include that I had to be extra selective. I am on the side of people that absolutely love this soup.

My mom never made it growing up, but living in Chicago, there were many many local markets that always had it available on weekends. We’d get a giant tub of it a couple times a year and I would devour a bowl or two of it every-time!

This is what that giant tub looks like, we get it from a supermarket called, Carniceria La Gloria (2551 W 51st St, Chicago IL 60632).

I always enjoy my menudo with a rolled up flour tortilla & lots of lime juice!

Although it may be easy to just go out and buy some menudo already made. I promise you it will be much much tastier homemade! It is a sort of long cooking process, but it is all very simple steps that just happen to take around 4-5 hours total for it to be fully cooked and ready to serve.

It’s very popular around this time of the year, Christmas & New Years, starting cooking it early in the day and you have the perfect bowl of deliciousness for your hangover needs the next morning.

Beware, this recipe makes A LOT of menudo, but my rule of thumb whenever making a recipe that is a bit more time consuming, always make a big batch, because more than likely you are making it to serve a large amount of people but it can also freeze easily. I will give you some tips for making a smaller batch, but go ahead, make this large one, feed your friends and family, feed your neighbors, or store it in the freezer for later.
