Hi Everyone! I’m Alfredo Garcia, although many of you probably know me as Freddsters from all my social media accounts. I am super happy to be here starting this new journey on Substack & even happier that you are here reading along joining me for the ride. Truly no words will ever be able to thank you enough for your support. That being said, I’m beyond excited to welcome you to the launch of Lime After Lime, my new Substack/Newsletter where I’ll be serving up exclusive recipes, my foodie travels, kitchen must-haves, and so much more. The name comes from my love of lime and literally adding “Lime After Lime” to all my tacos, and pretty much anything else. A squeeze of lime makes everything better!
About Me
I’m a home cook, not really a chef since I didn’t go to culinary school, newly published author, and full-time content creator who has been obsessed with food since I could reach the kitchen counter. I am grateful to have learned from my mom as well as my Food Network favorites like Rachael Ray. Cooking shows raised me and it has been a full circle experience getting to share so much of what I have learned with all of you. My culinary journey started as a private chef for a professional baseball player in the MLB. After that, I kind of took a break from the food world and started working a door to door sales job, it was fun while it lasted, but it had nothing to do with food. Soon after, I started posting my recipes to TikTok and slowly my audience grew into a community of home cooks and foodies. Sharing what I love with my community has allowed me so many amazing opportunities including launching my own salsa macha AND of course becoming a cookbook author! My first cookbook Let’s Make It was released in April of this year! (I will link it below for you). It has been an absolute dream come true! I am so grateful for the community and to everyone that has given me a follow over the years. (In fact, I dedicated my first cookbook to my followers, because they are so important to me and without you, none of this would be happening) If you are new here, thank you for being here! I look forward to getting to know more of you through this new platform. And if you’ve been an OG following since the beginning, sending a big hug and many thank yous.
A quick Substack/Lime After Lime exclusive note for you. I am excited to announce an expansion of my signature Salsa Macha. My team and I are currently working on a full rebrand PLUS adding two new options! Stay tuned, the Lime After Lime readers will be the first to hear more. After plenty of requests for more spice I am excited for everyone to try the next launch of my salsa macha.
Food isn’t my only passion. I’m also a huge TV, movie, and book nerd. You can typically find me cooking and filming new recipes, binge watching the latest show or reading the stack of new cookbooks for the week. (Wait until you see my cookbook collection!) I love finding inspiration everywhere and I hope to give a little more inspiration with Lime After Lime.

A Brand New Recipe – Cauliflower Steaks with Feta, Olives and Pistachios
Obviously there has to be a recipe & this first one is maybe a little different than what you’re used to seeing from me, but it’s so easy, a little spicy, cheesy, tangy, salty, oh and it’s vegetarian. It’s a simple cauliflower steak that doesn’t look super simple, but it is. You can also simply break up the cauliflower into florets, coat in olive oil, toss in the seasonings and roast/air fry if you don't want to cut into steaks. Then simply serve the way it’s served with the steak presentation.
I want this to be a little fun, different recipes, but also some of what you all know and love from me. That being said, I also want to open the floor to you all and suggest recipes, I will make it all(eventually).
I hope you all try out this recipe and love it as much as I did.
Cauliflower Steaks with Feta, Olives and Pistachios
Ingredients:
For the Feta:
8 ounces feta cheese
1 cup greek yogurt
2 tbsp olive oil
For the Cauliflower Steaks:
1-2 heads cauliflower (get two if you want to get 4 perfect cuts of cauliflower that hold together)
1 tsp paprika
1 tsp onion salt
1 tsp kosher salt
1 tsp black pepper
¼ tsp ground cumin
High heat cooking oil as needed
For the Olive & Pistachio Topping:
3 tbsp olive oil
2 tbsp salsa macha (or chile crisp)
1 cup pistachios, roughly chopped/crushed
2 garlic cloves, grated
3 green onions, thinly sliced, only using the whiter part
2 cups castelveltrano olives, halved
2 tbsp capers
½ cup peperoncini, sliced
Cilantro for garnish
Limes, for garnish
Flakey Salt to taste
Instructions:
To make the feta spread:
Add the feta, greek yogurt and olive oil to a blender or food processor, blend until combined.
Pour into bowl and refrigerate until ready to serve.
To make the Cauliflower Steaks:
Slice the cauliflower into thick 1 ½ - 2 inch planks. The very middle of the cauliflower will get you perfectly thick cut planks that fully stay intact, the rounded edges on the sides will likely fall apart, if you want 4 perfect planks, get two heads of cauliflower and use the broken up cauliflower pieces for another recipe. Alternatively you can break up the cauliflower into bigger pieces. (Then just saute the cut up cauliflower florets in oil with the spice mixture)
Add all the seasonings to a bowl and mix to combine.
Set a large skillet to medium high heat and add about 2 tablespoons of high heat cooking oil such as avocado or algae cooking oil.
Once hot, place the cauliflower steaks into the pan, work in batches if needed.
Cook for 1-2 minutes on the first side, flip over, season this first already cooked side with 1 teaspoon of the spice mixture. Cook for 2 minutes, flip over and season this next side with 1 teaspoon of the seasoning mix.
Continue cooking the cauliflower for an additional 3-4 minutes on each side or until starting to get charred in parts. Set aside.
To make the Olive & Pistachio mixture:
In the same skillet where you cooked the cauliflower, reduce the heat to medium, add in the olive oil and salsa macha, cook for 1-2 minutes.
Add in the pistachios and cook stirring frequently for 3-4 minutes.
Add in the thinly sliced green onions and grated garlic, cook for 2 more minutes.
Add in the olives, capers and peperoncini, stir well to combine everything and cook for 4-6 minutes.
